We have found this mushrooms ocasionally, and even I dont like to eat mushrooms in general, this ones are really delicious. Name is Shiitake mushrooms. So while cooking I had got an inspiration to make a painting a day "Mushrooms". Here we go:

Ingredients for 2 person (we eat middle size portions as now we r trying to be more fit) :
red skin potato - 1 lb. (around 1,30$)
shiitake mushrooms - 1 lb. (around 9.90 $)
onion - I used half of onion as I dont like it too much, but you can use whole one
garlik - I love more garlik so I took a few
fresh ginger - optional, adds some interesting spicy flavour - I used the size of cherry
black pepper, salt
oil for frying
2 wide frying pans
Here is the way:
1. I love to use fresh red skin potato unpeeled, just like this:
I clean it with brush from some dust and little dirts and it is ready to be sliced like this:
Use one of the frying pan - put it on stove with medium temperatute and stir some oil into it (I love to used coconul oil) - not too much, but it should cover the surface with 1 inch or less
Put your cutted potato into hot pan and mix well, let it stay like that for 5 - 10 mins - mix it only few times - otherwise potato will turn to meshed one.
2. Take your Shiitake mushrooms, dont wash it!! this is the main secret of amazing flavour!! Usually they sell it already clean enough at shop. If you will use water - it will suck water inside and taste will be watery, not so great. Cut your mushrooms just like this and put into the second frying pan with same amounth of oil :
Dont be scary to use extra oil , but dont turn it into the oily fries like McDonalds do :)
3. Same way cut your onion and slice garlic - add into the mushrooms and fry during 10 - 15 mins on middle fire, mix sometimes. I love to use wooden spoon for mixing, just like on photo above. At the end, add little salt.
4. After 15 mins of frying potato check it if it is still hard or soft already enough to eat. Cover it with pan lid for last 5 mins. Mix 1 time. Add salt and pepper how you love it, I prefer little salt and more pepper. Taste it, if you feel is enough soft to eat and yummy , add a cooked mushrooms into it. Mushrooms will look something like this:
And fry it 1 more minute all together. Food is ready :)
Serve it with your favourite salad if you prefer, I also added few pine nuts :
